This is the no-knead bread recipe my mother has been baking for 45 years. Start to finish, it can be ready in three hours. It bakes in well-buttered Pyrex bowls — no need to preheat a baking vessel for this recipe — and it emerges golden and crisp with a soft, tender crumb. 🍞🍞🍞🍞🍞 | This is the no-knead bread recipe my mother has been baking for 45 years. Breads of Europe
Bread is a staple food throughout Europe. Throughout the 20th century, there was a huge increase in global production, mainly due to a rise in available, developed land throughout Europe, North America, and Africa.
Simple, European Style, Everyday Bread Recipe with Video
There are many reasons that I’ve stopped eating whole wheat bread and I’ll certainly share them with you in the coming weeks. For now, I’ve been doing all of my bread baking with organic, un-enriched, un-bleached white flour. Although soon, I’d like to make the switch to Jovial’s Einkorn, high extraction flour.
I’ve got to admit, after eating whole wheat flour for so long, I had to get accustomed to the flavors in white bread. I also had to make adjustments to all of my standard recipes, particularly my morning pancakes and sandwich bread. However, since I’ve started feeding my children ridiculously good lunches for kids (follow me on Instagram), I’ve found that we no longer eat sandwich bread like we used to.
Homemade Dutch Oven Crusty Bread

When I first moved to the US, I found it very difficult to find a good quality, freely baked bread. I went to the supermarket and everything I saw was in a plastic bag and tasted artificial. I was so disappointed. I missed my crusty, warm bread from the bakery around the corner, in my hometown in Poland. Even regular grocery stores had a good quality fresh, crusty bread.
Now you can understand my huge disappointment in the quality of bread found in a grocery store in the US. However, summer here was a bit easier. I found great local bread sellers in the farmer’s market, but the farmer’s markets would close in November. So, during the winters I had a huge shortage of my favorite thing to eat.

These batards (or Italian-style loaves), featuring a crunchy crust and chewy interior marked by irregular holes, are a perfect accompaniment to any meal. They also make great sandwiches. The poolish (or starter), made the night before, gives the bread its excellent texture and flavor; while not difficult to make, this bread does take some time, so plan accordingly.

Lithuanian Bread (Polish Deli Copycat)

Lithuanian rye bread is a favorite for making sandwiches using European deli meats and kielbasa. I have a post on how to make tea sandwiches using different types of European meat sausages. We like to toast Lithuanian black bread and then smear some mayo over the top, bologna, and a cucumber or tomato slice (so good!) This makes the perfect open-faced breakfast sandwich or snack to a cup of tea!

While I have a few things like a bannaton proofing basket and a flour sack towel, you do not need these things to have a successful loaf. The main tools to make this are a bowl, towel, and a pot with a lid that can sustain high heat. Do not overthink bread making. If, for some reason, you do not have a scale, there are ways to look up how to convert ingredient weight to volume.
How to Make an Amazing Eastern European Style Rye Bread
The Belarusian rye bread I posted many moons ago was one of my favourite recipes ever. I grew up eating this kind of bread and if I had to choose only one, then this would be the bread I would happily eat for the rest of my life. It has a soft and bouncy texture. It packs an amazing flavour. It stays soft and fresh longer than other breads. And it compliments any savoury topping. But it is also amazing with just butter and a small pinch of sea salt.
Traditional European bread (4/2/12)
Bread. Is there anything simpler, or more complex? In its many forms, bread is a staple in nearly every culture and a symbol of life, sustanance, and community. Clearly a good loaf is more than the sum of its parts.
In this installment of "Cooking around the World," we learned about the amazing chemistry that yields delicious flavor and texture (thanks to those enzymes, yeast, and bacteria!). There were also plenty of practical tips on crafting quality bread, with the central idea of taking the time to let it reach its full potential through a long fermentation and with little mixing - letting the dough do its own work.
European Peasant Bread - Take 2
by Danni3ll3 10/5/18 The Fresh Loaf
This is a repeat of Trevor’s European Peasant Bread (with the substitution of Kamut instead of wholewheat) while implementing Dabrownman’s suggestions: “I would do three different things with the levain build. I would first get the starter amount up to 15 g from 10g. Then get all the bran into the first feeding of the levain all 35g so it is in the acid the max amount of time and go to a 2 stage levain build with the first stage being 4 hours and the 2nd stage 8 hours. Then I would use the high extraction flour from the whole grain for the 2nd stage of the levain rather than the unbleached white flour.“ My levain builds were longer than suggested but I did follow the rest.

Going to Le Cordon Bleu had been a dream since I realized there was a profession called “pastry chef”. After I completed my bachelors, I was itching to enroll at Le Cordon Bleu in Sydney, Australia for a grand diploma, but had to change my plans because my parents didn’t approve of that career path. I should’ve stuck to my guns in hindsight, but hindsight is 20/20 as they say.
