How to European Breads
Breads of Europe
Bread is a staple food throughout Europe. Throughout the 20th century, there was a huge increase in global production, mainly due to a rise in available, developed land throughout Europe, North America, and Africa.
Simple, European Style, Everyday Bread Recipe with Video
There are many reasons that I’ve stopped eating whole wheat bread and I’ll certainly share them with you in the coming weeks. For now, I’ve been doing all of my bread baking with organic, un-enriched, un-bleached white flour. Although soon, I’d like to make the switch to Jovial’s Einkorn, high extraction flour.
I’ve got to admit, after eating whole wheat flour for so long, I had to get accustomed to the flavors in white bread. I also had to make adjustments to all of my standard recipes, particularly my morning pancakes and sandwich bread. However, since I’ve started feeding my children ridiculously good lunches for kids (follow me on Instagram), I’ve found that we no longer eat sandwich bread like we used to.
Homemade Dutch Oven Crusty Bread

When I first moved to the US, I found it very difficult to find a good quality, freely baked bread. I went to the supermarket and everything I saw was in a plastic bag and tasted artificial. I was so disappointed. I missed my crusty, warm bread from the bakery around the corner, in my hometown in Poland. Even regular grocery stores had a good quality fresh, crusty bread.
Now you can understand my huge disappointment in the quality of bread found in a grocery store in the US. However, summer here was a bit easier. I found great local bread sellers in the farmer’s market, but the farmer’s markets would close in November. So, during the winters I had a huge shortage of my favorite thing to eat.

While I have a few things like a bannaton proofing basket and a flour sack towel, you do not need these things to have a successful loaf. The main tools to make this are a bowl, towel, and a pot with a lid that can sustain high heat. Do not overthink bread making. If, for some reason, you do not have a scale, there are ways to look up how to convert ingredient weight to volume.
How to Make an Amazing Eastern European Style Rye Bread
The Belarusian rye bread I posted many moons ago was one of my favourite recipes ever. I grew up eating this kind of bread and if I had to choose only one, then this would be the bread I would happily eat for the rest of my life. It has a soft and bouncy texture. It packs an amazing flavour. It stays soft and fresh longer than other breads. And it compliments any savoury topping. But it is also amazing with just butter and a small pinch of sea salt.
Traditional European bread (4/2/12)
Bread. Is there anything simpler, or more complex? In its many forms, bread is a staple in nearly every culture and a symbol of life, sustanance, and community. Clearly a good loaf is more than the sum of its parts.
In this installment of "Cooking around the World," we learned about the amazing chemistry that yields delicious flavor and texture (thanks to those enzymes, yeast, and bacteria!). There were also plenty of practical tips on crafting quality bread, with the central idea of taking the time to let it reach its full potential through a long fermentation and with little mixing - letting the dough do its own work.
European Peasant Bread - Take 2
by Danni3ll3 10/5/18 The Fresh Loaf
This is a repeat of Trevor’s European Peasant Bread (with the substitution of Kamut instead of wholewheat) while implementing Dabrownman’s suggestions: “I would do three different things with the levain build. I would first get the starter amount up to 15 g from 10g. Then get all the bran into the first feeding of the levain all 35g so it is in the acid the max amount of time and go to a 2 stage levain build with the first stage being 4 hours and the 2nd stage 8 hours. Then I would use the high extraction flour from the whole grain for the 2nd stage of the levain rather than the unbleached white flour.“ My levain builds were longer than suggested but I did follow the rest.

Bread Machine French Bread – Easy Baguette Recipe
This is a pretty simple recipe because I made it for beginners. Many online French bread recipes call for a number of different “rising” periods, complex rolling & shaping of the bread, adding steam inside the oven, etc. However, my French bread recipe does not include these steps because I believe that bread machine recipes should not be too complicated. Let professional bakers make the fancy, over complicated and expensive baguettes while you make some easy, delicious and very inexpensive homemade French bread & baguettes for your family.
Crusty European Style White Bread
"This is a combination and variation of two recipes (Kitchenaid and Julia Child) for French bread. While I don't think what I produced can be classified as authentic French bread, it does taste like the crusty white bread one finds in Europe, especially Italy. The interior is soft and creamy and the exterior has a hard crust."
Old World Breads
Many of my recipes are made from the recipe basics. I am a stickler with perfecting the basic techniques and mastering the base recipe before moving towards the more elaborate methods. Here we are going to look at the European bread for some tastes that you might have been yearning. I will give you the additional ingredient secret to turn your bread into that which our German, Polish, Russian, Slavic and Ukrainian forefathers brought to the US when they came which has been removed due to costs and streamlining. Plus we will review a few techniques that make the crust and texture of the bread somewhat outstanding.
French-Style Country Bread
You could make this bread, and no other, for the rest of your baking career, and never feel cheated. It uses the sponge method: sort of a poor man's or woman's sourdough starter — no feedings, little pre-planning, lots of flexibility, and superb bread. If you've always wanted crusty, hole-ridden, French-style bread, this is it.
How to Make European Peasant Bread

Brilliant. In my opinion, you have the best dough handling skills of all bakers I have seen. What amazes me the most is that you don't seem to use any bench flour for the pre-rounding and the final shaping, yet your dough doesn't stick to your hands or the bench. I know that it is because of your masterful technique, but do you use anything else to avoid sticking? Like oiling your bowls, or wetting your bench? I can clearly see there is no flour on your bench, so I thought you might use oiled bowls or wet surface.

How to Make a Dark and Rich Eastern European Style Rye Bread
This one is quite similar to the other dark rye bread recipe I posted recently. It is soft and bouncy with a rich aroma and flavor. The crust is beautifully shiny and soft thanks to the glaze. And like most other rye breads it will stay soft for days.

european-style hearth bread
by Bridget 11/22/08 THE WAY THE COOKIE CRUMBLES
I decided I needed to deviate from the two bread books I have, which end up being the only sources I use for bread recipes. I’d heard that King Arthur Flour had a nice variety of bread recipes, so it seemed time to give one a try. I was looking for something rustic to go along with the chanterelle and Speck salad, and I wanted to avoid recipes that were already on my list to try from other sources (like ciabatta; I’ve been itching to try Peter Reinhart’s since I got his book several years ago). I chose European-Style Hearth Bread because it sounded like a good, basic rustic bread.
European Sourdough Rye Breads
I am working my way through Stan Ginsberg's "The Rye Baker". Many if not most recipes are done in a steam environment. I'm wondering if I can avoid the hot water pan in the oven by using the Dutch Oven method of steam retention. I've used that method successfully for wheat breads.
Crusty German bread rolls (Brotchen)
The crusty German bread roll recipe I am sharing today is a basic recipe for a plain round roll - but not just any old plain round roll. This bread roll has been given the addition of a dough-enhancer in the form of barley malt flour, which acts not only to improve the rise of the dough, but also gives a softer texture, helps the crust to brown, and extends the shelf-life of the bread.
German-Style Rolls: Brotchen (the crusty secret is an egg white glaze)
Many people have been writing to ask for German-style hard rolls. The most common are Brotchen (little breads). They’re made from egg white-enriched white dough, and brushed with more egg white before baking at high temperature with steam. In the book, I concentrated on French-style crust techniques, which tend not to use egg white for high-temperature crisp crusts on lean breads. Turns out that the egg white creates an incredible crust and crumb.
Oma's Easy No-Knead Artisan Bread (Krustenbrot)
by Gerhild Fulson 1/12/25 Quick German Recipes
Artisan bread is that rustic, crusty loaf made with just four ingredients: flour, water, yeast, and salt. It’s funny to call it “artisan,” since it’s so simple—but it really does look and taste like something from a master baker!
The original no-knead version came from Jim Lahey from Sullivan Street Bakery and made waves when it hit the New York Times in 2006. Since then, it’s been everywhere. But mine? It’s just a bit easier. Give it a try. You won’t be disappointed.

i think you need a starter. i know a few people just adding yeast to the water&flour mixture and wait but the taste and smell is not the same winking smiley I bought their starter (and the instant sourdough extract ..just to try it) and the starter is great. i made very very good yeast free bread after just 1 week! the extract is a nice idea if you have forgotten to feed your sourdough or have no time to wait. i tried this 'artisan in 5 minutes bread' and the dough tasted a little boring (it's no suprise as it is only water, flour, yeast and salt). i added 1,5 tsp of the sourdough extract and get a really nice sourdough bread without this waiting thing.
