Reducing Ultra-Processed Foods and Improving Public Health

What Ultra-Processed Foods Are

Ultra-processed foods are industrially formulated products that often contain additives, refined starches, added sugars, unhealthy fats, preservatives, flavor enhancers, emulsifiers, colors, and other ingredients not commonly used in home cooking. Common examples include sugary drinks, packaged snacks, processed meats, sweetened cereals, frozen meals, packaged baked goods, instant foods, and many ready-to-eat convenience products.

Research and public-health organizations distinguish ultra-processed foods from ordinary processed foods. Some processing, such as freezing, pasteurizing, fermenting, or canning, can be useful and compatible with a healthy diet. The main concern is with heavily formulated products that are designed for long shelf life, intense taste, convenience, and frequent consumption.

Health Risks Linked to Ultra-Processed Foods

A growing body of research links diets high in ultra-processed foods with poorer health outcomes. Studies and reviews have associated high intake with increased risks of obesity, cardiovascular disease, type 2 diabetes, hypertension, inflammation, digestive disease, cancer, depression, cognitive decline, and premature mortality.

Controlled feeding studies have found that ultra-processed diets can lead people to eat more calories and gain more weight compared with minimally processed diets. Newer research also suggests that ultra-processed foods may affect metabolic health, inflammation, hormone markers, brain reward pathways, and cardiometabolic risk even when calories or general diet guidelines are considered.

Biomarkers and Better Measurement

Recent NIH-supported research has developed blood and urine biomarker scores that may help identify diets high in ultra-processed foods. These biomarker tools could improve nutrition research by giving scientists a more objective way to measure ultra-processed food intake instead of relying only on food questionnaires.

Better measurement matters because researchers are still working to understand exactly how ultra-processed foods affect health. Biomarkers may help future studies test whether reducing ultra-processed foods improves disease risk, inflammation, metabolism, and long-term health outcomes.

Practical Ways to Reduce Ultra-Processed Foods

Reducing ultra-processed foods does not require eliminating every packaged item. A practical approach is to replace the most harmful products first, especially sugary drinks, processed meats, packaged sweets, chips, refined snack foods, sweetened cereals, and ready-to-eat meals high in sodium, added sugars, and unhealthy fats.

Useful strategies include reading ingredient labels, choosing products with shorter and simpler ingredient lists, cooking more meals at home, replacing sugary drinks with water, choosing plain oats instead of sweetened instant packets, eating more fruits and vegetables, using beans and whole grains, keeping healthier snacks available, and gradually swapping packaged convenience foods for minimally processed alternatives.

Policy, Food Systems, and Public Health

Ultra-processed foods are not only an individual diet issue. They are also a food-system and public-health issue because they are widely available, aggressively marketed, inexpensive, convenient, and often dominant in modern food environments. Reports from public-health organizations, universities, and international agencies have called for stronger policy responses, clearer food labeling, better definitions, nutrition programs, and healthier food environments.

Organizations such as WHO, FDA, CDC, NIH, the American Heart Association, Harvard Health, Mayo Clinic, and other medical and research institutions have all addressed ultra-processed foods as a growing nutrition concern. Public-health strategies may include better consumer education, improved labeling, limits on marketing to children, healthier school and community food options, and policies that make minimally processed foods easier to access.

Ultra-processed foods are strongly linked with poor diet quality and a wide range of chronic health risks.
