What Fermented Foods Are

Fermented foods are foods or drinks transformed by bacteria, yeast, or other microorganisms. During fermentation, microbes break down sugars and other food components, helping preserve food, create distinctive flavors, and sometimes increase nutritional value. Common fermented foods include yogurt, kefir, kimchi, sauerkraut, kombucha, miso, tempeh, natto, sourdough, and fermented pickles.

Not all fermented foods are automatically probiotic foods. A probiotic food must contain live microorganisms that provide a health benefit when consumed in adequate amounts. Some fermented foods are pasteurized, heated, filtered, or processed in ways that reduce or eliminate live cultures.

Fermented Foods and the Gut Microbiome
