Baja-Style Cauliflower Tacos
A true Baja California experience requires sunny, breezy patios and a plate of tacos. We aimed to re-create the feel of a Baja-style fish taco in our home kitchen, instead bringing veggies to the forefront. We thought that battered cauliflower bites, drizzled with a cool and creamy vegan sauce, were the perfect vegan stand-in for the fish. We wanted to avoid the mess of deep-frying, so we cut the cauliflower into large florets and roasted them. To boost their flavor, we dunked the pieces in canned coconut milk seasoned with garlic and spices and then rolled them in a mixture of panko bread crumbs and shredded coconut.
Couscous Tacos
"From a vegetarian cookbook of mine. I love Couscous (KOOS-koos)- it is a quick-cooking grain made from ground semolina in the shape of very tiny beads, so it is a cool change from regular pasta! Also, I suppose you can use soft shell tacos shells, not just hard shell."

When Alex Henry reworked a classic dish from his childhood for his first restaurant, Sureste Mexican, a food hall spot in St. Louis, he also happened to engineer an exuberantly flavorful and smart steak taco for home cooks. Bistec a la Yucateca is a common main dish in the Yucátan peninsula often made with skirt or flank steak, but Mr. Henry uses its citrusy, earthy marinade on thinly sliced ribeye for tacos.

This is a fast, satisfying fish dinner with Cajun flavors. Chad Shaner cooked it for staff meals when he was a line cook at Union Square Cafe in Manhattan. It was, he said shyly when The Times talked to him in 2013, one of the restaurant staff's favorites. “Everyone loves taco day,” he said. The recipe is not particularly Mexican. Shaner hails from Smyrna, Del., and served in the Navy before he went to cooking school.

Ican't get over the guilt I have for ignoring an entire realm of grilling greatness in this column: seafood. Despite my ability to overcome most food aversions, seafood is one I just can't seem to shake, which leaves me feeling like I'm doing a huge disservice to all of you. Fish Tacos With Mango Avocado Salsa
"What is so good about these are a fresh fruit salsa, avocado cream, grilled fish, and I love a light cabbage to bring it all together. Now, you can add tomato, or black olives which is one of my favorites and it is a very inexpensive easy dish. You can also add beans right to the dish which is also really good, or ... What is so nice, is make some of my black beans, just sauteed with garlic, lime, fresh peppers, cumin, onions makes an amazing quick side dish. If all that isn't enough, corn on the cob. Just throw some in the oven or on the grill.

A chief contender for dinner party raving, these savory-sweet tacos de pescado al pastor, from the chef Luis Herrera of Ensenada restaurant in Brooklyn, are impressive parcels of celebration. Grilling the pineapple gets you close to the charred flavor of al pastor, “in the style of a shepherd,” without the traditional rotating vertical spit, a method of barbecuing lamb that Lebanese immigrants brought to Mexico in the late 19th century.
