Bread is a staple food throughout Europe. Throughout the 20th century, there was a huge increase in global production, mainly due to a rise in available, developed land throughout Europe, North America, and Africa.

There are many reasons that I’ve stopped eating whole wheat bread and I’ll certainly share them with you in the coming weeks. For now, I’ve been doing all of my bread baking with organic, un-enriched, un-bleached white flour. Although soon, I’d like to make the switch to Jovial’s Einkorn, high extraction flour.

I’ve got to admit, after eating whole wheat flour for so long, I had to get accustomed to the flavors in white bread. I also had to make adjustments to all of my standard recipes, particularly my morning pancakes and sandwich bread. However, since I’ve started feeding my children ridiculously good lunches for kids (follow me on Instagram), I’ve found that we no longer eat sandwich bread like we used to.

When I first moved to the US, I found it very difficult to find a good quality, freely baked bread. I went to the supermarket and everything I saw was in a plastic bag and tasted artificial. I was so disappointed. I missed my crusty, warm bread from the bakery around the corner, in my hometown in Poland. Even regular grocery stores had a good quality fresh, crusty bread.

Now you can understand my huge disappointment in the quality of bread found in a grocery store in the US. However, summer here was a bit easier. I found great local bread sellers in the farmer’s market, but the farmer’s markets would close in November. So, during the winters I had a huge shortage of my favorite thing to eat.

This is a repeat of Trevor’s European Peasant Bread (with the substitution of Kamut instead of wholewheat) while implementing Dabrownman’s suggestions: “I would do three different things with the levain build.  I would first get the starter amount up to 15 g from 10g.  Then get all the bran into the first feeding of the levain all 35g so it is in the acid the max amount of time and go to a 2 stage levain build with the first stage being 4 hours and the 2nd stage 8 hours.  Then I would use the high extraction flour from the whole grain for the 2nd stage of the levain rather than the unbleached white flour.“ My levain builds were longer than suggested but I did follow the rest.

I’d heard that King Arthur Flour had a nice variety of bread recipes, so it seemed time to give one a try. After some sourdough struggles, it is rewarding to return to this recipe that is easy, always a success, and always a crowd pleaser.  They say it is European-style crusty bread. The sourdough starter was the reason how i found them ..after i killed my beloved 1 year old 'herbie' *g*

i think you need a starter. i know a few people just adding yeast to the water&flour mixture and wait but the taste and smell is not the same winking smiley I bought their starter (and the instant sourdough extract ..just to try it) and the starter is great. i made very very good yeast free bread after just 1 week! the extract is a nice idea if you have forgotten to feed your sourdough or have no time to wait. i tried this 'artisan in 5 minutes bread' and the dough tasted a little boring (it's no suprise as it is only water, flour, yeast and salt). i added 1,5 tsp of the sourdough extract and get a really nice sourdough bread without this waiting thing.

I’d heard that King Arthur Flour had a nice variety of bread recipes, so it seemed time to give one a try. I was looking for something rustic to go along with the chanterelle and Speck salad, and I wanted to avoid recipes that were already on my list to try from other sources (like ciabatta; I’ve been itching to try Peter Reinhart’s since I got his book several years ago). I chose European-Style Hearth Bread because it sounded like a good, basic rustic bread.

This is a repeat of Trevor’s European Peasant Bread (with the substitution of Kamut instead of wholewheat) while implementing Dabrownman’s suggestions: “I would do three different things with the levain build.  I would first get the starter amount up to 15 g from 10g.  Then get all the bran into the first feeding of the levain all 35g so it is in the acid the max amount of time and go to a 2 stage levain build with the first stage being 4 hours and the 2nd stage 8 hours.  Then I would use the high extraction flour from the whole grain for the 2nd stage of the levain rather than the unbleached white flour.“ My levain builds were longer than suggested but I did follow the rest.

I didn't knead the dough or wait all night, but it was the most successful one I've made recently. It only takes a little time for the crust to crack perfectly. Many friends left messages asking me if there is a quick and delicious bread recipe! Today this is my answer! Come and try it!

I decided I needed to deviate from the two bread books I have, which end up being the only sources I use for bread recipes. I’d heard that King Arthur Flour had a nice variety of bread recipes, so it seemed time to give one a try. I was looking for something rustic to go along with the chanterelle and Speck salad, and I wanted to avoid recipes that were already on my list to try from other sources (like ciabatta; I’ve been itching to try Peter Reinhart’s since I got his book several years ago). I chose European-Style Hearth Bread because it sounded like a good, basic rustic bread.

I am working my way through Stan Ginsberg's "The Rye Baker". Many if not most recipes are done in a steam environment. I'm wondering if I can avoid the hot water pan in the oven by using the Dutch Oven method of steam retention. I've used that method successfully for wheat breads.

They’re made from egg white-enriched white dough, and brushed with more egg white before baking at high temperature with steam. In the book, I concentrated on French-style crust techniques, which tend not to use egg white for high-temperature crisp crusts on lean breads.
