How to Bake Bread at Home

Baking bread at home transforms a few basic ingredients into fresh, flavorful loaves. Most yeast breads are made with flour, water, yeast, and salt, although fats, milk, eggs, sweeteners, seeds, and whole grains can alter the flavor and texture. Successful bread baking depends on accurate measurements, sufficient gluten development, controlled fermentation, careful shaping, and proper baking.

Beginners can start with a simple sandwich loaf, no-knead bread, focaccia, or dinner rolls. As their skills develop, they can explore sourdough, baguettes, enriched doughs, whole-grain breads, regional flatbreads, and advanced fermentation techniques.

Essential Ingredients and Equipment

Flour supplies the starch and proteins that form a loaf’s structure. Bread flour generally produces stronger and chewier dough because it contains more protein than all-purpose flour. Whole-wheat, rye, spelt, einkorn, emmer, and other grain flours contribute distinctive flavors and nutritional qualities but may require adjustments to hydration and handling.

Yeast produces the carbon dioxide that makes dough rise. Instant yeast and active dry yeast are both suitable for home baking, although their preparation and fermentation rates may differ. Naturally leavened sourdough relies on a living culture of wild yeast and bacteria.

Salt adds flavor, strengthens gluten, and moderates fermentation. Water hydrates the flour and allows gluten to develop. Milk, butter, oil, eggs, sugar, honey, potatoes, and tangzhong can make bread softer, richer, sweeter, or more resistant to staling.

Useful bread-baking equipment includes:

  • A digital kitchen scale
  • Large mixing bowls
  • A sturdy spoon or dough whisk
  • A bench scraper
  • Loaf pans or baking sheets
  • A Dutch oven, baking stone, or baking steel
  • Proofing baskets
  • A sharp scoring blade or bread lame

A kitchen scale provides more consistent results than volume measurements because flour can become compacted in a measuring cup.

Mixing, Kneading, and Gluten Development

Bread making begins by combining the ingredients into a rough dough. Some recipes require immediate kneading, while others use an autolyse—a rest period during which flour and water hydrate before the remaining ingredients are added.

Kneading organizes and strengthens gluten so the dough can trap gases produced during fermentation. Dough may be kneaded by hand or with a stand mixer. High-hydration doughs can be strengthened with stretch-and-fold, coil-fold, slap-and-fold, or lamination techniques.

The windowpane test can help determine whether gluten is sufficiently developed. A small piece of dough should stretch into a thin, translucent membrane without tearing immediately. Not every bread requires the same amount of gluten development, so the appropriate test depends on the flour, hydration, and desired crumb.
