Simple Traditional Recipes

Swahili Chai

Ingredients: Chai Blend, water, milk, and sweetener. Traditional Method: Simmer 1 to 1 1/2 teaspoons of Chai Blend in 1 cup water for 3 to 5 minutes. Add 1/2 cup milk and sweetener. Simmer 2 to 3 minutes more, then strain and serve hot.

East African Pilau Rice

Ingredients: Rice, Pilau Masala, onion, oil, broth or water, and salt. Traditional Method: Sauté onion until golden. Add 1 to 2 teaspoons Pilau Masala and stir for 15 to 30 seconds. Add 2 cups rice, 3 cups water or broth, and salt. Cook covered on low for about 15 minutes. Rest 10 minutes before serving.

Chicken Masala

Ingredients: Chicken, Chicken Masala, onion, tomatoes, oil, salt, and optional coconut milk or yogurt. Traditional Method: Season chicken with Chicken Masala and salt. Sauté onion, add chicken, and brown lightly. Add tomatoes and simmer until softened. Add a little water, coconut milk, or yogurt if desired. Cook until the chicken is tender.

Fish Masala

Ingredients: Fish fillets, Fish Masala, oil, lemon juice, and salt. Traditional Method: Mix Fish Masala with oil, lemon juice, and salt. Rub onto fish and marinate for 15 to 30 minutes. Grill, bake, or pan-sear until cooked through. For a saucy version, simmer onion, tomato, and coconut milk, then add the seasoned fish.

Beef Masala

Ingredients: Beef, Beef Masala, onion, tomatoes, oil, salt, and broth or water. Traditional Method: Season beef with Beef Masala and salt. Brown beef in oil. Add onion and tomatoes, then cook into a sauce. Add water or broth and simmer until tender. Serve with rice, chapati, or vegetables.
