Simple Fish Masala Recipe

Simple Fish Masala

Ingredients:

  • 1 lb fish
  • 1 tbsp Swahili Spice Haven Fish Masala
  • Lemon juice
  • Salt
  • Oil
  • Optional onion
  • Optional tomato
  • Optional garlic
  • Optional ginger
  • Optional coconut milk

Traditional Method: Rub 1 lb fish with 1 tbsp Swahili Spice Haven Fish Masala, lemon juice, salt, and oil. Marinate 15–30 minutes. Grill, bake, or pan-sear until cooked. For a saucy version, simmer onion, tomato, garlic, ginger, and coconut milk, then add the seasoned fish.


East African Fish Masala Recipes

1. Samaki wa Kupaka — Swahili Grilled Fish in Coconut Sauce

Style: Kenyan / Tanzanian coastal fish

Background: Samaki wa Kupaka is a Swahili coastal dish often made with whole fish, coconut milk, tomatoes, onion, garlic, ginger, curry spices, turmeric, lemon, and cilantro.

Ingredients:

  • 1 whole tilapia or 1 lb firm white fish
  • 1 tbsp Swahili Spice Haven Fish Masala
  • 1 cup coconut milk
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 3 garlic cloves
  • 1 inch fresh ginger
  • 1 tbsp oil
  • Juice of 1 lemon
  • Salt and black pepper

Method: Season the fish with Fish Masala, lemon juice, salt, and black pepper. Let it rest for 15 to 30 minutes. Grill, bake, or pan-sear the fish until almost cooked. In a pan, cook onion, garlic, ginger, and tomatoes until soft. Add coconut milk and simmer until slightly thickened. Add the fish and spoon the sauce over it until fully cooked.

Serving idea: Serve with rice, coconut rice, chapati, or ugali.

2. Swahili Coconut Fish Curry

Background: Swahili coconut fish curry commonly combines onion, garlic, warm spices, tomatoes, coconut milk, tamarind or lemon, and red snapper or other firm fish.

Ingredients:

  • 1 lb red snapper, tilapia, cod, or other firm white fish
  • 1 tbsp Swahili Spice Haven Fish Masala
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 tomato or 1 cup chopped tomatoes
  • 1 cup coconut milk
  • 1/2 tsp tamarind paste or lemon juice
  • 1 tbsp oil
  • Salt to taste
  • Optional chili flakes
  • Fresh cilantro

Method: Cook onion slowly in oil until golden. Add garlic and Fish Masala, stirring briefly to release the aroma. Add tomato and cook until softened. Stir in coconut milk and tamarind or lemon juice. Simmer gently, then add fish pieces. Cook on low heat until the fish flakes easily.

Serving idea: Garnish with cilantro and lime wedges.

3. Mchuzi wa Samaki — East African Fish Curry

Background: Mchuzi wa Samaki means fish curry, sauce, or stew in Swahili. East African versions often sear the fish first, then simmer it in a sauce made with onion, peppers, garlic, tomatoes, coconut milk, and spices.

Ingredients:

  • 1 lb fish fillets
  • 1 tbsp Swahili Spice Haven Fish Masala
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 garlic cloves, minced
  • 2 tomatoes, chopped
  • 1 cup coconut milk
  • 2 tbsp oil
  • Salt and pepper
  • Lemon juice
  • Fresh cilantro

Method: Season fish with salt, pepper, lemon juice, and Fish Masala. Sear the fish briefly on both sides, then remove from the pan. Cook onion and bell pepper until softened. Method: Rub fish with lime juice, salt, and Fish Masala. In a pan, cook garlic, ginger, tomato, tomato paste, and optional chili in oil. Add coconut milk and simmer until the sauce becomes smooth and fragrant. Add the fish and cook gently until it flakes. Finish with fresh cilantro.

Serving idea: Serve with white rice, coconut rice, or chapati.

5. Machi Paka — East African Fish in Coconut Curry Sauce

Style: East African / Swahili coast fish curry
Good for: Richer restaurant-style fish masala recipe

Background: Machi Paka is an East African fish curry built around fish and a coconut-milk-based sauce. It works well with salmon, snapper, tilapia, or other firm fish.

Ingredients:

  • 1 lb salmon, snapper, tilapia, or firm white fish
  • 1 tbsp Swahili Spice Haven Fish Masala
  • 1 onion, chopped
  • 3 garlic cloves
  • 1 inch ginger
  • 1 tomato, chopped
  • 1 cup coconut milk
  • 1 tbsp oil
  • Lemon or lime juice
  • Salt
  • Fresh cilantro

Method: Season fish with Fish Masala, salt, and lemon or lime juice. Sear the fish until browned on the outside, then set aside. Blend or finely chop onion, garlic, ginger, and tomato. Cook this mixture in oil until thick and aromatic. Add coconut milk and simmer until the sauce deepens. Return the fish to the pan and cook gently until done.

Serving idea: Serve with coconut rice, pilau rice, or flatbread.
