Simple Pilau Masala
Ingredients:
- 2 cups rice
- 1 to 2 tsp Swahili Spice Haven Pilau Masala
- 1 onion
- 2 tbsp oil
- 3 cups water or broth
- Salt to taste
Traditional Method: Sauté onion in oil until golden. Add 1 to 2 tsp Swahili Spice Haven Pilau Masala and stir for 15–30 seconds. Add 2 cups rice, 3 cups water or broth, and salt. Cover and cook on low about 15 minutes. Rest 10 minutes, then fluff and serve.
East African Pilau Masala Recipes
1. Zanzibar Pilau — Island-Style Spiced Rice
Style: Zanzibar / Swahili coast pilau
Good for: Special occasion rice, spice-forward pilau, vegetarian or meat pilau
Background: Zanzibar pilau is known for warm island spices such as cloves, cinnamon, cardamom, cumin, coriander, nutmeg, star anise, ginger, and turmeric. It reflects the spice-trade history of the Swahili coast.
Ingredients:
- 2 cups basmati rice
- 1 to 2 tbsp Swahili Spice Haven Pilau Masala
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 3 cups water, chicken broth, or vegetable broth
- 2 tbsp ghee, butter, or oil
- Salt to taste
- Optional raisins
- Optional cashews
- Optional cooked chicken, beef, or vegetables
Method: Cook onion in ghee, butter, or oil until golden. Add garlic, ginger, and Pilau Masala, stirring until fragrant. Add rice and stir to coat each grain. Pour in broth or water and season with salt. Cover and cook until tender. Let rest, then fluff gently.
Serving idea: Add raisins and cashews for a festive Zanzibar-style rice dish.
2. Kenyan Pilau with Potatoes and Kachumbari
Style: Kenyan celebration pilau
Good for: Holiday meals, Eid, Christmas, family gatherings, party trays
Background: Kenyan pilau is often served with kachumbari, a fresh tomato-and-onion salad. Some versions include potatoes along with beef or chicken, broth, browned onions, garlic, ginger, pilau masala, bay leaf, and cilantro.
Ingredients:
- 2 cups basmati rice
- 1 lb beef or chicken
- 1 to 2 tbsp Swahili Spice Haven Pilau Masala
- 2 onions, thinly sliced
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 potatoes, cubed
- 3 cups broth or water
- 2 tbsp oil
- Salt to taste
- Optional bay leaf

Method: Brown the meat in oil and set aside. Cook onions until golden, then add garlic, ginger, Pilau Masala, and potatoes. Add rice, broth, salt, and the browned meat. Cover and cook on low until the rice is fluffy and the potatoes are tender. Rest before serving.

Ingredients:
- 2 cups basmati rice
- 1 lb chicken pieces
- 1 to 2 tbsp Swahili Spice Haven Pilau Masala
- 2 onions, sliced
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 3 cups chicken broth or water
- 2 tbsp oil
- Salt and black pepper
- Optional potatoes
- Optional cilantro
Method: Season chicken with salt, pepper, and a little Pilau Masala. Brown chicken in oil, then remove or push to the side.
